How can I hide the Evaluation (Performance Management) history from employees and make it available when needed?

This feature is available on the Premier and Master payroll editions

Yes. An employee's evaluation (Performance Management)  history can be hidden from employees. 

To do so, disable the "Allow employee to see their own PM history" checkbox when creating or editing any of the evaluations on the Evaluation Processes screen.

      Navigate > Config > Human Resources > Performance Management> Evaluation Processes
